Our journey into natural processing began around 2018, driven by Moises Herrera's unwavering commitment to quality. However, perfecting the "recipe" for a clean natural coffee took several years of meticulous refinement. Today, our natural process yields exceptional coffees that prioritize cleanliness without compromising on flavor complexity.

E X P E R I M E N T S

Beyond washed and natural, we continuously explore what we refer to as experimental coffees. These offerings involve tweaking various variables during fermentation, including the variety, fermentation environment (anaerobic, aerobic, or hybrid), duration of fermentation, and final processing method (washed, honey, or natural). This constant exploration allows us to push the boundaries of flavor and innovation, ensuring that each cup of coffee offers a unique and unforgettable experience.
